What is Cilbir?

Cılbır is a Turkish dish of poached eggs with yogurt. Moreover, this egg dish originated in the Ottoman Empire, where sultans enjoyed it for breakfast.

Turkish cilbir is a unique weekend breakfast or brunch option, especially when combined with other types of breakfast.

It’s also a good quick and easy option for your next brunch party or weekend breakfast If you are looking for something different, other than a classic Pakistani brunch like puri and chikar cholay

Ingredients & Variations For The Turkish Cilbir Breakfast

Eggs. You can use any type of egg; just ensure it is fresh and bring it to room temperature before poaching.

Yogurt. Pick a premium thick, creamy strained yogurt, like Greek yogurt. Allow it to come to room temperature before using it in this recipe.

Garlic. Fresh garlic is unquestionably a game-changer.

Herbs: This is optional but can improve the overall flavor. Fresh mint, dill, or any other herb can be used.

Spices: To prepare the tarka, or warm butter sauce, I typically use chili flakes, paprika, and ground cumin, as they are usually readily available in my kitchen. However, it is suggested that you substitute Aleppo pepper for a more authentic taste if you have it on hand.

  • Poached Eggs: Fresh eggs at room temperature are poached more easily
  • Yogurt: Room-temperature yogurt is also necessary to maintain the harmony of flavor and texture.
  • Serve Fresh: Another important note is that Cilbir should be served immediately after the eggs have been poached.
  • Garnishing with herbs is entirely optional, but it elevates the dish. I highly recommend garnishing with your favorite heb.

How To Serve

It can be served for brunch or breakfast. Cilibri should be served immediately while the ingredients are still warm. To enjoy it to the fullest, pair it with some rustic toast.

Ingredients

  • 1 1/4 cup Greek yogurt

  • 4 pouched eggs

  • fresh dill as per taste

  • fresh mint as per taste

  • salt as per taste

  • 1 freshly grated garlic cloves

  • For the Spiced Butter Sauce
  • 2 tablespoon butter

  • 1 tablespoon olive oil

  • 1 teaspoon chili flakes

  • 1 teaspoon paprika

  • 1/4 teaspoon ground or powdered cumin, optional

Directions

  • In a mixing bowl, combine the grated or crushed garlic cloves, finely chopped mint and dill, and Greek yogurt. Season with salt and leave aside.
  • Fill a pot halfway with water and bring it to a boil. Stir in vinegar. Create a whirlpool with a whisk in the simmering water.
  • Now carefully place an egg in the center of the vortex and cook for about 2 to 3 minutes When the egg is done, use a spoon to transfer it to a plate lined with paper towels to absorb any excess water.
  • Melt the butter and oil in a pan, then add the spices. Stir until thoroughly combined.
  • Transfer the Greek yogurt to a serving bowl, top with the eggs, and drizzle with the chili sauce. Serve with extra dill and mint on top.
