Pakistani-style Squash sabzi is a delicious vegan, gluten-free, and diabetic-friendly dish made with only 5 ingredients and takes only 15 minutes.
You may be surprised to learn that all zucchini are squash, but not all squash are zucchini. The flavor and texture are similar to Turai, but Turai has more water content. I am not sure if it is available in Pakistan or India, but you can use the same recipe with Turai; however, you must peel the Turai before cooking, whereas zucchini is usually used without peeling.

Ingredients You Need For Squash Sabzi
- Squash or Zucchini: Any color, yellow or green, can be used or mixed and matched.
- Onions: I prefer red onions, but yellow and white will work just as well.
- Tomato: Any fresh tomatoes can be used
- Mustard Seeds add a nutty flavor to the dish
How To Serve Squash Sabzi
There are several ways to serve this sabzi. You can have it as a main dish alongside any type of flatbread, such as roti, paratha, or naan. Alternatively, it can also be served as a side dish with rice or any meat dish.
