Ingredients

  • 0.5 cup oil

  • 1 medium onion, thinly sliced

  • 2 medium sized tomatoes, cut

  • 1 teaspoon red chilies

  • salt as per taste

  • 0.5 teaspoon turmeric

  • 0.5 teaspoon kalonji seeds (onion seeds)

  • 1 teaspoon cumin

  • 0.5 teaspoon mustard seeds

  • 2 cups cubed potatoes

  • 2 cups cubed carrots

  • 1 cup peas

  • For Garnishing
  • Hand full of cilantro

  • 2 green chilies

Directions

  • In a pan, heat oil and add thinly sliced onion.
  • Add the tomatoes and all of the dry ingredients once the onions have turned translucent. Stir for a few minutes.
  • Add all the vegetables at this time, stir, and cover. Vegetables should be simmered at low heat until soft.
  • Add chopped green chilies and cilantro. Cover for 5 minutes.
  • Serve with paratha or roti.
