This tasty carrot halwa is typically saved for special occasions. I also shared years ago Gajrela and Carrot and Rice Pudding, . Before I tried this halwa recipe, I used to believe preparing carrot halwa was an all-day affair. To my surprise, when I finally tried making it myself, I realized that from grating the carrots to cooking, it takes less than 2 hours. It’s much simpler than I had imagined, and the results are worth it.

One of my favorite things about making carrot halwa, a game-changer, is that you can make a large quantity and freeze it for up to a month or store it in the refrigerator. As a result, I can enjoy the warm, comforting taste of Gajar ka Halwa all winter long without the fuss.

It’s like having a bit of celebration whenever I want—how amazing is that? What’s even better, this makes it perfect for last-minute desserts or when unexpected guests arrive.

  • Wash and peel the carrots thoroughly.
  • Grate them using a medium or fine grater. Both food processors and hand grinders work well.

2. Cooking the Carrots in Milk

  • Heat a thick-bottomed pan or kadhai.
  • Once it’s warm, Add the grated carrots and milk.
  • Cook on medium heat, stirring occasionally, until the milk starts to reduce and the carrots soften.

3. Adding Sugar and Ghee

  • Once the milk has mostly evaporated, stir in the sugar. The mixture will release moisture again, so keep stirring.
  • Add the ghee and cook on low-medium heat until the mixture thickens and the ghee separates.

4. Flavoring with Cardamom

  • Sprinkle cardamom powder into the halwa and mix well for a burst of fragrance.

5. Optional Addition: Khoya or Condensed Milk

  • If you want a richer halwa, mix in crumbled khoya or a few tablespoons of condensed milk at this stage. Cook for another 5 minutes.

6. Garnishing and Serving

  • Add chopped nuts to the halwa and mix.
  • Serve hot or warm, garnished with extra nuts or a drizzle of ghee for that extra indulgence.

Tips for Perfect Gajar Ka Halwa

  • Carrot Choice: Use fresh, juicy red carrots for the best taste and texture.
  • Milk: When it comes to the milk full-fat milk enhances the creaminess. On the other hand, skimmed milk should be avoided as it doesn’t provide the desired texture for this dessert.
  • Slow Cooking: Patience is key! Slow-cook the halwa to bring out its rich flavors.
  • Adjust Sweetness: Additionally, always taste and adjust the sugar to your preference.

FAQs About Gajar ka Halwa

1. Can I use regular orange carrots instead of red ones?

Absolutely! While red carrots are traditionally used for their natural sweetness and vibrant color, orange carrots work just as well and still result in delicious halwa.

2. How can I make Gajar ka Halwa richer?

To enhance the richness of halwa, add crumbled khoya (mawa) or condensed milk during the cooking process.

3. Can I make it vegan?

Yes, you can! Replace milk with almond or coconut milk and use coconut oil or vegan butter instead of ghee. The flavor will be slightly different but still delicious.

4. Can I reduce the sugar?

Absolutely! You can adjust the sugar according to your taste or even use alternatives like jaggery, honey, or a sugar substitute for a healthier version.

5. Why is my halwa not turning glossy?

The glossy texture usually comes from ghee. If your halwa lacks shine, add a little more ghee and cook on low heat until it achieves that beautiful, glossy finish.

6. Can I add other ingredients to the halwa?

Definitely! In fact, you can experiment with raisins, dried cranberries, or even shredded coconut to add more flavor and texture to your halwa.
