Badam Ka Sharbat is a traditional Pakistani beverage that is bursting with the goodness of almonds. This coolant drink is the perfect way to quench your thirst and nourish your body on sweltering summer days.

Ingredients

  • 500 gms almonds

  • 750 gms cup sugar (adjust to taste)

  • 1 cup water (for cooking)

  • 1/2 teaspoon cardamom powder

Directions

  • Wash and soak the Almonds
  • Pour enough water over the almonds in a bowl to cover them.
  • Soak the almonds for a minimum of 6-8 hours or overnight. This softens the almonds and makes them easier to blend.
  • Peel the Almonds
  • Drain the soaked almonds and rinse them under cold water.
  • Gently squeeze each almond to remove the skins. The skins should come off easily after soaking.
  • Transfer the peeled almonds to a food processor or blender. Add a little water (about 1/2 cup) to help blend the almonds
  • Blend the almonds until you achieve a fine, smooth almond paste. Add more water if needed, but keep the paste thick.
  • In a saucepan add water, sugar, and cardamom powder and let it cook for a few minutes until the sugar dissolves completely
  • Now add the almond paste. Cook over medium heat, stirring continuously to prevent sticking and burning. Bring to a gentle boil.
  • Continue to cook the mixture on low heat, stirring occasionally, until it thickens to a syrupy consistency (about 10-15 minutes). The consistency should be slightly thick but pourable.
  • Remove the pan from heat and allow the almond syrup to cool completely.
  • Transfer the cooled syrup to a clean, airtight glass jar or bottle.
  • Add 2-3 tablespoons of almond syrup to a glass to serve badam ka sharbat.
  • Fill the glass with chilled water or milk, and stir well.
  • Garnish with a few slivers of almonds or a sprinkle of cardamom powder if desired.
  • Store any leftover almond syrup in the refrigerator. It can be kept for up to 2-3 weeks.
