Difference Between Gajrela And Gajar Ka Halwa

Gajrela is a semi-liquid base where you don’t dry the milk, so it cooks faster than gagar ka halwa. On the other hand, Gajar ka halwa is a dry version (bhuna hua) by simmering carrots in milk and sugar until completely dried and then adding khoya and dried nuts at the end.

15-Minute Quick Weeknight Recipe

Wash and peel the carrots, and grate them in a food processor or manual food grater. use a heavy bottom pot. Heat the oil, then add the cloves and stir for a few seconds before adding the grated carrots. Sauté for a few minutes to release the aroma, then add the milk and let it simmer for about 15 minutes, or until the carrots soften and the milk thickens. Now add the sugar and cook for another 5 minutes. It is ready to serve. Serve it hot for optimal flavor, though you can serve it cold if you would prefer.

Ingredients

  • 5 cups whole milk

  • 1 1/2 cups grated carrots

  • 1/4 cup sugar (or as per taste)

  • 2 cardamom

  • 4 cloves

  • 2 tablespoons oil

Directions

  • Heat the oil in a pan over medium heat and add the cardamom and cloves.
  • Once the aroma has begun, add the milk and bring it to a boil.
  • Once it boils, add the sugar and the shredded carrots, and cook over medium to low heat until the carrots are tender. Usually, it takes twenty minutes. During this process, give it a quick stir.
  • Mix well. You can serve it plain or top it with almonds and pistachios for a delicious presentation.
  • It is ready to eat and can be served either warm or cold.
