These burritos are not only quick to make, but they are also freezer-friendly, making them the perfect grab-and-go breakfast when you are in a hurry. Microwave it for one minute, and you are ready to go.

The most important thing to remember is that you should not use a cold tortilla because it will be difficult to fold and roll and will most likely break. However, it will be much easier if the tortillas are warm or at room temperature, so warming them in the microwave or quickly over a flame works well.

As previously stated, these super-easy burritos are ideal for making ahead of time. I usually make a large batch to use on busy mornings and to pack in the kids’ lunches.

  1. Wrap the prepared breakfast burritos in foil or parchment paper to keep them nice and tight.
  2. Freeze: Place the wrapped burritos in large zip-lock bags and freeze for up to 2 months.
  3. To Reheat, remove the burrito’s foil wrapping and wrap it in a wet paper towel. Microwave for 3 to 4 minutes, flipping halfway through, until heated.
  4. You can leave burritos out for about two hours before using them or packing them for lunch.

Ingredients

  • 1/4 cup cooking oil

  • 2 pounds ground chicken meat or breakfast sausage

  • 2 lb frozen, cubed hashbrowns

  • 12 large eggs

  • 3 cups shredded Mexican-style blend or Monterey jack cheese

  • Salt and pepper to taste

  • 2 teaspoons crushed red peppers

  • 3 tablespoons red hot sauce (optional for extra heat and flavor)

  • 16 large flour tortillas

Directions

  • Cook Burrito Filling
  • Heat oil in a large skillet on medium-high heat
  • Add the ground meat to the skillet and cook until no pink remains. Drain off the grease.
  • Pour the eggs into the skillet and cook until they are set, stirring frequently.
  • Cook hashbrowns until they soften
  • Add salt, black pepper, and crushed red pepper to taste
  • If you like, you can add hot sauce at this time ( this is completely optional )
  • Finally, remove from the heat and thoroughly mix in the cheese. If you do not want to mix the cheese into the filling, you can add it to each burrito individually.
  • Assemble Burritos
  • Heat each tortilla in the microwave for 10 to 15 seconds to make it soft and easier to roll
  • Spoon the filling onto the bottom â…“ of each tortilla.
  • Fold the bottom first, then the sides, and tightly roll up the burrito.
  • These burritos can be served immediately or frozen (see freezing instructions in the notes below).

  • Freeze: Place the wrapped burritos in large zip-lock bags and freeze for up to 2 months.
