This recipe is a hit in my house; everyone loves it, and it is easy to make. So it is on our table almost every couple of weeks in the fall and winter. HOW TO MAKE LASAGNA SOUP?
- Browning the meat. Start by browning ground meat in a large pot. cook meat until brown.
- Cook your vegetables. Incorporating chopped garlic, onions, zucchini, and carrots not only enhances the taste but also adds texture too.
- Sauces and spices: Add tomato sauce, diced tomatoes, and broth (chicken, vegetable, or beef broth, or simply skip and just add additional water). Also, add spices and herbs, at this time and cook for a few minutes.
- Pasta: Bring the pot to a boil, then add lasagna noodles (broken into 3-inch pieces) to the pot. Reduce the heat to medium-low and cook, stirring occasionally, until the noodles are tender. Add spinach at the end, if using.
WHAT KIND OF PASTA SHOULD I USE IN LASAGNA SOUP?
You can use lasagna noodles broken into 3-inch pieces, but you can substitute any type of pasta for the lasagna soup.

Lasagna soup thickens as it cools because the noodles soak up the broth. To adjust the consistency, add more cooking liquid as needed before reheating.
Lasagna Soup Variation
- Meat Variations: Ground beef Italian sausage or meatless crumbles can be used in place of ground chicken. Follow the same recipe instructions.
- Vegetarian Lasagna Soup: To make it vegetarian soup, omit the meat, add vegetable broth instead of chicken or beef broth, and use more chopped vegetables.
- Canned tomatoes can be easily replaced by a 24-ounce marinara sauce jar plus 1 cup of water. After cooking, the Instant Pot version may require an additional 1 cup of liquid to adjust the sauce consistency.
- Pasta substitutions: You can use any shape of pasta you like and that is available. Just be careful not to overcook them, especially in the Instant Pot. If using regular lasagna noodles, break them into smaller pieces.
- Add your Favourite Veggies: I know how tricky it can be to get kids to want to eat veggies. I recommend you add carrots, zucchini, mushrooms, yellow squash, or spinach for extra flavor and nutrition while keeping true to lasagna flavor.
How To Serve Lasagna Soup?
Serve the soup hot, topped with a dollop of ricotta cheese. Add fresh basil, if desired. Serve garlic or cheese bread on the side.
How To Store Leftover Lasagna Soup
Allow the soup to cool completely before transferring it to a container with a lid and storing it in the fridge for up to 4 days. To reheat the soup, place the desired amount in a bowl, cover with a paper towel (we do not want a tomato-based mess in the microwave! ), and heat on high for 30 seconds at a time until heated through.
